These both ingredients: oil and ghee are essentially used to enhance the flavour of the food.
The term ‘ghee’ can be explained as a kind of clarified butter, it is made from cow’s milk. Conventionally, ghee is prepared by warming butter on a slow pan, which is then stirred gently till the oil split up from the butter. It turns into a form like a state, and it is then strained out and discarded. Further on the oil turns into a pale yellow color which is then filtered and put in storage as ghee.
Whereas, oil is defined as any neutral, nonpolar chemical substance, which is a viscous liquid at ambient temperatures. It is prepared from plant, animal or man-made fat. Oil is extensively used in preparing different types of edibles. There are two separate processes from which oil is produced, first, is extracted from a fruit, nut/fruit and then it is refined to alter its appearance as well as texture. Further work is done to improve its taste as well as smell.
